Hope everyone is having a nice weekend! Mine’s been busy but great! I am going to recap back to my lunch on Friday since it is very blog worthy!
Roasted vegetables and goat cheese on walnut raisin bread. This one belongs on my “top 5 favorite sandwich” list!
I didn’t really do anything Friday night. After waking up at 5 in the morning, I just felt like passing out right after work! I was productive in the kitchen at least! I roasted some brussels sprouts, broccoli, and squash.
I topped them over a salad with some Laughing Cow and salsa. I decided to make a small egg white omelet for some extra protein. Great combination!
Dessert was a Stawberries & Cream Lite Choice bar! I topped it with some of the cookie crunches that they gave me since I always need my dose of chocolate after a meal!
On Saturday I had plans to take a 12:30 inTensati class. I usually try not to eat too much before a class because I always get a cramp. I woke up extra early yesterday around 8:00 so I made a nice breakfast. I knew it had to hold me over till after 2:00.
2 egg whites and 1 egg with mushrooms and Laughing Cow on a flat out wrap.
Yum! I should start bringing these to work with me! They are almost as good as my Energy Kitchen wraps
I went to the Greenwich Equinox for class. Patricia Moreno, the founder of inTensati, was the teacher. The class was packed! I’d say there were about 50 people in the room. The energy was extra high because of it. The class was challenging but amazing. Patricia is extremely motivational but kicks our butts at the same time. I loved our stretching at the end. We did relaxing balance moves. I fell over quite a lot so I really need to work on my balance!
I decided to stay for Zumba! I walked in and could not believe who the teacher was. Remember when my mom and I went to a Zumbathon in Philly? (You have to click on the link and check out how small Daisy was!!!) Anyway, we loved one of the instructors and asked him where he teaches. He told us New York and gave us his card. I walked into the room and it was him!! So weird! The class was exactly like the Zumbathon. He did not talk during the whole class. He just did the moves and we followed. The class actually felt like a cool down after taking inTensati! Much less intense but still a lot of fun! I actually burned 440 calories in inTensati and 400 in Zumba so they were both great workouts! I never want to get on an elliptical again!
I was starving after the gym so I stopped at Westside Market and picked up some sushi. I got a salmon, tuna, avocado brown rice roll. Yum!
It did nothing for me after such an intense workout so much more snacking was done when I got home! I had a Balance bar, Dr. Krackers, soup, and another TLC bar! I didn’t bother taking pictures of my soup dinner since I had it every night last week!
I went to a bar with my friend Melanie last night. I can’t believe I have no pictures of that either! I had a vodka with Fuze on the way there and a vodka soda with a splash of cranberry at the bar! Fun night!
I really wanted to go to inTensati today but my right knee is really bothering me. It is frustrating because I would love to take that class every day but my body won’t allow it. I just signed up for Core Fusion instead! It is probably less stressful on my knees than jumping up and down on hardwood floors. I am due for a Core Fusion class anyway since I only went once this week! I have to go get ready so I am off! Have a great Sunday!
