Walmart Winner and Weekend Fun!

Hope everyone had a nice holiday! I will start off with the winner of the $15.00 Walmart Gift Card and then do a little weekend recap!

The winner is Eunice from Food 4 Fitness. Her 4th of July plans were: “to sleep in, eat pancakes, lay by the pool with my book, and maybe fireworks by the beach at night. :)

Eunice’s plans sounded very similar to my weekend! On Saturday I woke up and was very sore from intenSati so I decided to do the Body By Bethenny with Bethenny Frankel DVD.  This was a mix of yoga and strength training- exactly what I needed! I felt so much better after the 45 minutes of yoga. I will do a review once I try the DVD one more time :)

I worked up quite the appetite after my workout so I decided to make some Purely Elizabeth pancakes! Elizabeth is a fellow IIN graduate so I love to show my support!

The pancake mix is gluten free, sugar free, dairy free, and wheat free. I used almond milk, 1 egg, olive oil, cinnamon, a banana, and some chocolate chips!

They look messy but they tasted delicious! I made enough for 3 days worth of pancakes! Perfect for the long weekend!

Saturday afternoon I had plans with Angela from Miss Chubby Hubby and Dori! We went to Angela’s apartment for some delicious sangria.  

After a few drinks, we headed over to P.S.1 for a party they have every Saturday called Warm Up. It was a lot of fun! They were playing all house music so I was happy!

After the party we headed over to Water Taxi Beach for some more drinks! We were all starving so we just ended up eating some dinner and heading home. I got a yummy veggie burger.

It was a great day! Angela and I actually grew up 15 minutes away from each other in Philly! Small world!

On Sunday I woke up and got a nice hangover breakfast from a nearby cafe. I got a mushroom and feta cheese omelet with whole wheat toast.

I relaxed and enjoyed the sun all day around Queens. At night we decided to head downtown to watch the fireworks by the Hudson. We ate dinner at Southwest, the same place we ate after my race! I enjoyed 2 margaritas!

I went with the Broiled Tilapia. It came withasparagus, shrimp and jicama salsa. It was kind of small for the price but extremely delicious!

My friend got the whole wheat pasta with sausage, peppers, and onions in garlic oil. I had a taste and it was great too!

We were about to leave to watch the fireworks until we saw 3 girls at the table across from us pouring their drinks into soup cups! We asked our server if we could do the same! He brought us 2 margaritas and 2 soup bowls. Amazing.

After the fireworks we got hungry again and spotted a Whole Foods! We made some salads before heading home. I must say, my salad was a great drunk munchy food!

Yesterday I knew I wanted to be outside but had no idea where. My friend and I decided to walk to Forest Park in Queens and lay out. We knew it was far but I don’t think we realized just how far! It ended up taking over an hour to walk to! At least we got some sun and exercise at the same time! We walked around the park and explored for another hour before getting too hot and tired. Eventually we took a cab back to the movies and saw Toy Story 3 and Eclipse. Both were really good! I am not a crazy Twilight fan and have never read the books but do love the movies. I love Edward too just in case anyone was wondering. We finished the weekend with some margaritas and Mexican at 5 Burro!

  • i had a great weekend too. for the record i devoured the books and am team edward all the way (even though jacob is hotter) lol

    i have plans to hit up the neighborhood pool over the weekend. its by Sears and im looking into the day price. Let me know if you want to go. my brother used to work there- its a nice pool!

    I am dying for a margarita but in this heat I cannot handle alcohol! whew!

  • My favorite part of the weekend was definitely PS1 and Water Taxi Beach! So much fun – we have to go again soon :)

    I’m jealous that you saw Eclipse – I am a crazy Twilight fan so its sacrilege that I haven’t seen it yet. You have to read the books they are about 100 times better than the movies (and I love the movies).

    I loooooove Twilight! Eclipse was my favorite of the three (book and movie).
    I definitely suggest reading the books. They are FAR better than the movies- but I think that’s a given.

    Glad you had a great 4th! I’m in Table Rock, Missouri spending some time at my Uncle’s lake house. It’s beautiful here; don’t have to go home for another week!!

  • FUN WEEKEND! That party looked like it was the place to be. Wow, so many people looking like they are having a great time.

    Those gluten free pancakes look strange, yes, but I can tell they are delicious. My pancakes never look nice, but in my opinion they always taste great! I’ll have to try these because I’ve never tried any gluten free pancakes and I obviously need to!
