Big S Farms Recipe Contest
There were 8 amazing recipes submitted to me containing salsa and hot sauce! They all sounded wonderful to me so I thought it would be best to let you vote on your favorite!! Please choose your favorite recipe and leave it in the comment section below. I will choose the winner with the highest number of votes on Friday, April 24th. The winner will win 3 jars of salsa and 3 jars of hot sauce from Big S Farms!
I will also choose the 2nd prize winner (people who left me a comment or linked back) on Friday. Now read and below and vote! This is going to make you hungry!

1) Southwestern Spicy Meatloaf by Amanda from RunToTheFinish
2lbs ground turkey
1 small can corn
1 1/2 cups Fire on the Mountain Habanero Hot Salsa
1/3 cup egg beater
roughly 1 1/2 cups crushed crackers or tortilla chips
pepper
salt
Mix it up, bake it!! Then spread a lite layer of salsa on the top.
FABU and healthy!

2) Picante Chicken Packets by Chrisy from My Life My Journey
Serving size: 1 packet
6 oz thinly sliced potato
4 oz chicken breast (boneless, skinless and visible fat removed)
Mexican blend shredded cheese (use as much or as little as you like)
Salsa (use as much or as little as you like)
Mexican seasonings (cumin, chili powder, onion powder, garlic powder,
cilantro)
Preheat oven to 400 degrees. Tear off a piece of aluminum foil large
enough to put all ingredients inside it. Spray foil with non-stick
cooking spray. Layer 1/2 of the potatoes on the foil in the middle
created a base for your food. Season potatoes with Mexican seasonings,
salsa and 1/2 cheese portion. Layer remaining potatoes over the first
layer and cheese. Season with seasonings only. Place chicken on top of
potato layers. Season with seasonings, salsa and top with cheese. Fold
foil into packet and place on a baking sheet in over. Check potatoes
and chicken after 30 minutes of cooking. If chicken has reached an
internal temperature of 180 F, leave foil open and place in oven for
another 5 to 10 minutes. Then serve!
**I use around 1 oz of cheese to keep calories low.
**I use 1/2-3/4 cup chunky salsa.

4) Baked Buffalo Bites by Carol
1lb boneless-skinless chicken breasts, cubed
1 cup of Quaker oatmeal
1/2 cup Big S Farms hot sauce
1/2 cup egg whites
2 tbsp Mrs. Dash Hot’n Spicy Seasoning mix
2 tsp Lawry’s seasoning salt
2 tsp chili powder
1. Put cubed chicken into a ziploc bag with hot sauce. Toss to coat. Marinade in the refrigerator for 30 minutes.
2. While chicken is marinading, toast oats. Heat oven to 350 degrees and lay oats out in a single layer on baking sheet. Toast in oven for ten minutes, stirring halfway through.
3. Prepare breading. Blend oats until they are a fine consistency. Add seasoning mix, seasoning salt and chili powder. Mix thoroughly.
4. In a separate bowl, pour egg whites.
5. Preheat oven to 450 degrees. Spray baking sheet with cooking spray.
6. Dip individual chicken breast cubes quickly into egg white (you don’t want to wash off the hot sauce!) and then into the breading. I like to use one hand to dip into the egg white and the other to handle the breading. This prevents either hand from getting a cakey coating. Lay cubes on cooking sheet.
7. Bake for ten minutes, flipping chicken halfway through. Depending on your oven, it could be done a little bit early or take a little bit longer. Use an instant read thermometer to ensure the poultry is cooked to an internal temperature of 165 degrees.
You can serve Baked Buffalo Bites with a twist on the classic ranch or blue cheese dipping sauces by adding a couple drops of hot sauce to the dip before serving. It will brighten the flavor and kick up the heat.
This recipe makes four servings. The NI for each serving is 216 calories/1.5 fat/2 fiber/32 protein

Our recipe would be to take blah egg whites to the next level by pouring in a splash of hot sauce when you’re cooking your egg whites on the stove. Then put the whites in a healthy wrap, add some black beans or hummus and you’ve got an awesome breakfast or lunch wrap to go!!

6) Winner Winner South of the Border Chicken Dinner by Melissa from Fitness NYC
This was one of my favorite dinners growing up. It is so easy and quick. I often make it with beans since going veggie, but it’s better with chicken.
Ingredients:
1 Tbsp. oil
4 small boneless skinless chicken breast halves ( 1 lb.) cut into small chunks-real or vegetarian frozen
1 medium each: red and green bell pepper, chopped
2 cups water
1 cup Smoke on the Mountain Habanero Salsa
2 cups minute brown rice, uncooked
1 pkg. (10 oz.) frozen corn, thawed
1/2 cup reduced fat cheddar cheese, shredded
Directions:
HEAT oil in large nonstick skillet on medium-high heat. Add chicken and peppers; cover. Cook 7-8 minutes or until cooked through and peppers are tender, turning chicken pieces after 3-4 minutes and stirring peppers occasionally. Remove chicken from skillet; cover with foil or lid to keep warm.
ADD water and salsa to skillet; stir until well blended. Bring to boil.
STIR in rice and corn. Top with chicken; sprinkle with cheese. Reduce heat to low; cover. Cook 5 minutes or until rice is tender.

7) Salsa Recipe by Robin
1 lb of lean ground turkey meat
1 packet of low sodium taco seasoning
1 can of black beans (drained)
salsa
cilantro
hot chili pepper
Brown the lean turkey meat and then add taco seasoning according to directions (and I add in hot chili pepper to add an extra kick!). Once the meat is coated with the taco seasoning and the sauce thickens a bit, add in the drained black beans. Let this simmer for about 5 minutes for the flavors to meld together. Serve garnished with salsa and cilantro (and some fage yogurt and chips if desired).
We eat this for dinner all the time. Quick, healthy and tasty. We sometimes add in chopped onions and bell peppers as well.

Morning Kick Breakfast Burrito by Mallory from Bacon Wrapped Life
The best things about breakfast burritos: you can throw anything in them you have on hand or you think will be yummy, they don’t have to be pretty because they just get all wrapped up in the end, Mexican mornings are the best mornings!
- Sauté some diced onion and minced garlic in a tiny bit of oil until it’s nice and brown and soft. Add pinto or black beans and a bit of cumin and cayenne and heat through.
- Top 1 large tortilla (it works best if you heat it just a bit in the microwave first)with sour cream, your favorite salsa, shredded cheese, scrambled eggs, two slices of bacon (sausage, ham, or no meat work too), and the bean mixture.
- Wrap and enjoy!!

I have a related thermometer which was my keepsake for my 2nd journey to the US. I didn’t realize that we have to place it to the chicken while it is cooking until I saw it being used in a movie.
