Tuna & Goat Cheese Lunch

I decided to go to the gym again at lunch but took it light since I already did cardio this morning. I also had nothing else to do during my lunch hour and do not like sitting inside the whole time because my day goes by so much slower.

I did 30 minutes on the elliptical at intervals of 5 and 10. I watched one of those trashy talk shows to make the time go by. It was about how this girl had a baby that cannot talk, walk or eat by itself because she did cocaine during her pregnancy and was a prostitute. So sad…

I got back to my desk at 1 ready for my Tuna and Goat Cheese Sandwich!

Ingredients….

  • Chunk Light Tuna in Water
  • Roasted Red Pepper Hummus
  • Goat Cheese
  • Mustard
  • Lettuce
  • Cues
  • Arnold’s Sandwich Thin

With a bag of Popchips on the side!

I got back to my desk at 2 and had a mug of Peach Ginger Green Tea and the rest of my Vitatop from this morning for something sweet.

So good! Love the big chocolate chips in every bite!

I have absolutely no work to do for the rest of the day so I am going to go read blogs and make a little notebook of workouts I find online. Right now I have a bunch of pieces of paper of elliptical workouts crumbled at the bottom of my gym bag so it is time to get organized and make a pretty book. Bye!

    A moment of working! I need to mix some tuna and goat cheese, sounds like a really great combination!
    I am considering jumping on the ricotta bandwagon as well. I keep forgetting to get a notebook, I have the same crumply paper problem!

    Nice idea with the workouts I’m always writing them down on postits and then trying to memorize them before I go to the gym. How lucky you are you get to workout at lunch!

    I’m jealous of your vitatops!! I’ve never ever tried them but DANG they cost so much! BOO. They’re even more expensive than almond butter, which lasts quite a while! :)

    Gosh your last post was so cute. I love that you took pictures with the boyfriend!! It’s awesome to finally get to “meet” him and you together when he gets so many honorable mentions on your blog!

    Fabulous job at the gym today too!! I’m super impressed.

    Hehe – you sound like me Missy! I’ve got workouts printed out and stashed everywhere. A workout notebook is a great idea!

    How do you only eat 1/2 of a Vitatop? I must eat the whole thing in one sitting – I have no self control when it comes to those things.

  • I really love goat cheese it is really delicous. Most of the time I eat it as a dessert or use it to make a salsa.
