Hello! Hope everyone had a nice weekend! Mine was pretty relaxing. I will start from where I left off after making my yummy Kabocha on Saturday night!
Sunday
I woke up around 10 and debated going for a run or going to the gym. It looked very nice outside but for some reason I had no motivation to attempt a run. I was kind of tired and the track I run on is kind of far away. Instead I decided to take a 10:30 spin class. It was my favorite teacher that also teaches on Wednesdays so I knew it would be good!
I had a Z-Bar before leaving my apartment for some fuel. Apple Cinnamon is soo delicious!
The class was great! She played perfect music. I burned 500 calories and had a maximum heart rate of 190! I never usually burn that many calories in spin! It was very intense!
After spin, I was all energized and felt like running but I did not want to overdo it so I went home. I wanted to do some strength training so I did Level 1 of the Shred. I forgot how hard it is! I really wanted to stop after the first 5 minutes. I used to use 5 pound weights the entire time. I could only use 3 for most of the moves yesterday. I need to do weights more often!
I was starving after all of that exercise so I made a yummy red pepper, mushroom, and mozzarella cheese omelet. I used 1 egg and 2 egg whites.
I had a slice of Nature’s Pride bread on the side with Smart Balance spread, cinnamon, and Stevia.
I also had a nice glass of chocolate milk for some calcium after such an intense workout!
I ended up cleaning my room for 2 hours. It looks great now! I should take a picture later! I get in my random moods where I can’t stand clutter and end up cleaning for hours!
I snacked on a Chobani with grapes and Kashi Honey Sunshine later in the afternoon.
The boy came to visit around dinner time. We decided to try a new Mexican restaurant in Queens called Garcia’s.
It was pretty cute inside. There was a live guitar player which made it pretty romantic!
We started off with yummy chips and salsa.
There was a Sunday beer special: 5 Coronas for $10.00 ![]()
They were baby Coronas but it was still a good deal! We ended up having 2 buckets by the end of the meal.
I could not find anything too healthy on the menu so I ended up with the Vegetarian Fajitas: mushrooms, peppers, tomatoes, squash, broccoli, and onions served with Mexican rice and refried beans.
It was greasy but very delicious! I didn’t even bother with the tortillas. I could only finish half of the veggies!
The boy got the chicken fajitas and loved his too! Honestly our meals were kind of pricey so I am not sure if we would go back anytime soon. They were very enjoyable though!
We came home and made some dessert!
I mixed my vanilla with some of his Brownie Batter. YUM! I added 1/2 banana and whipped cream.
I made it to the gym before work. I promised myself I would try to go in the mornings this week because I think I have plans almost every night after work! I barely went last week and felt lazy and yucky. Since I sit for 8 hours straight a day, exercise seems necessary to give me some energy and lift my mood. There is no reason why I can’t wake up an hour earlier to exercise!
Today I did 50 minutes on the elliptical and burned 405 calories. I was very tired but was also pumped since I downloaded 3 new albums from iTunes yesterday! I can’t be on there for too long because I end up buying every good song without thinking about how much money I am spending! Oh well, new music always gets me motivated so it is worth it!
I got to work and had my usual bowl of oats with banana, cinnamon, and raw nut butter.
Oh yeah, I also had a Z-Bar in the middle of the night because I could not sleep and half a banana before the gym!
Lunch Preview
The boy and I combined our leftovers so I have a nice lunch today! I also brought some blue tortillas to munch on to keep the Mexican theme going!
I can’t wait for lunch now! 1 more hour!
Today after work the boy and I are meeting to watch the game. Apparently there is a big important football game on tonight. Attention New York readers….any good sports bar recommendations?? Good food and drink specials are a must! There are barely any in Forest Hills so we definitely want to go somewhere in the city but have no clue where!
Stay tuned for a giveaway tomorrow!

Your veggie fajitas look fantastic. I love it when restaurants add other things, such as broccoli to their fajitas. And it looks so fresh too!
