Sick Day

I stayed home from work today. I still have that cough that I’ve had for the past 2 weeks. I wake up every single night coughing for an hour nonstop. This morning I was up at 6 am and it was really painful. I decided to call out and go to the doctor. I will be going at 2:00 to see what this is! Other than the cough, I feel fine so the sick day is kind of fun. I made a great breakfast:

A mushroom and cheese egg white omelet burrito with some tea!

I would eat this every morning if I had the time!

I will recap back to some of Monday and Tuesday too!

Monday I had a wonderful bowl of oatmeal.

It looks messy but it was good! It contained loads of cinnamon, skim milk, almonds, and dates.

For lunch I had leftovers from my Japanese dinner Sunday night.

I had some salmon and shrimp teryaki with bean sprouts.

Along with a brown rice California roll. Yum!

After work, I went to Core Fusion! I bought a week pass for $40.00. It is a great deal considering one class is usually $35.00. I was not able to go yesterday but I might go later if the cough calms down. On Monday, I had a coughing fit during the quiet stretching session at the end of class so it was pretty embarrassing! The class was great though. There were only 6 other girls and the teacher was very nice. I love that it is across the street from work too!

I got home and made a delicious pasta dinner. I mixed zucchini, peppers, and salsa in whole wheat ziti.
I made lots of mushrooms too!

I used Miguel’s salsa by the way. So good!
I topped everything over a salad with Parmesan and cheddar cheese.

With a Synergy Kombucha on the side!


Tuesday’s breakfast was a Maple Pecan Boomi Bar and a protein drink (not pictured).

This bar was great! If you like maple syrup, you will like this bar!

I almost went to the gym at lunch but I got starving so I needed to eat instead of workout! I had a tuna wrap!

It had cucumbers, hummus, mustard, Laughing Cow, and lettuce on a French Meadow wrap.

With Miguel’s vegetable tortillas on the side.

I have no pictures of last night’s dinner because my parents came! They were doing stuff for my sister’s wedding during the day so they took me out to dinner after work. We went to Maryann’s Mexican. It is actually the same place we went to last time they visited but they were in love with it so we went back!

I got:

Jumbo shrimp sautéed with artichoke hearts & mushrooms in fresh lime juice, garlic, butter & finished with tequila. Served with salad, avocado vinaigrette and green chili rice

It was delicious! I came home and made some dessert:

Sugar-free vanilla pudding with whipped cream and choco chips!

I have 2 hours before I have to leave for the doctor so I might go lay out. Haha gotta love sick days sometimes. Have a good one!

    C.G. the Foodie: They are 200-230 calories depending on the flavor. They are really filling!
