Salsa Recipe Contest and Always Infinity Contest Winners!!

I received some amazing Big S Farms recipes over that past week that you can find here! It was tied for a few days but I finally have a winner!

The Morning Kick Breakfast Burrito by Mallory from Bacon Wrapped Life!!!!

The best things about breakfast burritos: you can throw anything in them you have on hand or you think will be yummy, they don’t have to be pretty because they just get all wrapped up in the end, Mexican mornings are the best mornings!

- Sauté some diced onion and minced garlic in a tiny bit of oil until it’s nice and brown and soft. Add pinto or black beans and a bit of cumin and cayenne and heat through.
- Top 1 large tortilla (it works best if you heat it just a bit in the microwave first)with sour cream, your favorite salsa, shredded cheese, scrambled eggs, two slices of bacon (sausage, ham, or no meat work too), and the bean mixture.
- Wrap and enjoy!!

Recipe:

Serving size: 1 packet

6 oz thinly sliced potato
4 oz chicken breast (boneless, skinless and visible fat removed)
Mexican blend shredded cheese (use as much or as little as you like)
Salsa (use as much or as little as you like)
Mexican seasonings (cumin, chili powder, onion powder, garlic powder,
cilantro)

Preheat oven to 400 degrees. Tear off a piece of aluminum foil large
enough to put all ingredients inside it. Spray foil with non-stick
cooking spray. Layer 1/2 of the potatoes on the foil in the middle
created a base for your food. Season potatoes with Mexican seasonings,
salsa and 1/2 cheese portion. Layer remaining potatoes over the first
layer and cheese. Season with seasonings only. Place chicken on top of
potato layers. Season with seasonings, salsa and top with cheese. Fold
foil into packet and place on a baking sheet in over. Check potatoes
and chicken after 30 minutes of cooking. If chicken has reached an
internal temperature of 180 F, leave foil open and place in oven for
another 5 to 10 minutes. Then serve!

**I use around 1 oz of cheese to keep calories low.
**I use 1/2-3/4 cup chunky salsa.
