Hello! Yesterday I mentioned that I was going to save my Sunday night dinner for today’s post since it involves a giveaway! I received a few things from MyBlogSpark and ProgressoFoods a few days ago that were perfect tools and ingredients for a delicious dinner!

I was very excited about the panko since my sister cooked panko breaded tilapia for me a few months ago and I’ve been meaning to buy it ever since!

On Sunday I decided to make panko breaded chicken. Main ingredients:
I dipped the chicken in Egg Beaters, coated it with panko, and then put it on the baking pan.
I had extra eggs left so I decided to do the same thing with mushrooms and squash. I added garlic powder, pepper, and chili to give the chicken and vegetables some flavor.
I set the oven to 400 degrees and cooked everything for 20 minutes. I topped the chicken with red sauce and lots of veggies.
The chicken came out great! It was crispy and very flavorful.
I topped a piece of the chicken over salad with veggies, red cause, and a little bit of whole wheat pasta.
Great dinner! It was like fried chicken but without all the greese and fat!
Last night I had leftovers! Delicious the next night too!
I will definitely be cooking with the panko again very soon! I want to make panko breaded fish and maybe some chicken fingers too!

Okay, so I know you asked only how to use the broth, but I know a GREAT recipe for both the broth and panko crumbs! It is panko encrusted chicken with a maple mustard pan sauce. You first cook the chicken with the crumbs as the crust, and then put the chicken to the side. In the same pan, pour some chicken broth in there, a little maple syrup, and your favorite gourmet mustard. May sound strange, but it is SOOOOO GOOD!!!!!!!

I just checked out the Single Edition site and I thought it looked really good and is a great website to learn new information! I'm not sure if you'd be able to do this, but the heading where you have 3 different pictures and 3 different topics to click on kind of looks crowded to me. So maybe if there's a way that you could make it like a slideshow where it goes from one to another.

I love broth! Idea: In a skillet, empty 1/2 to 1 can of broth & add seasoned chicken breasts. Cook on medium until chicken is done and viola, YUM! Sometimes I sautee red onions before adding the chicken & broth for a little added flavor. One of our favorite meals.

like to use Progresson Chicken broth rather than water when I'm cooking Ham and Navy Beans (dried). Give the beans a more full-bodied flavour!

You can use the broth and make roasted cauliflower soup. It's delicious and healthy. You roast cauliflower, onions and garlic and then you put it in a pot with chicken broth, thyme and bay leaves and cook it. After that you use a food processor to blend it all together, put it back in the pot add salt pepper and some non fat 1/2 and 1/2 and let it mix together and you have a delicious, healthy soup. That's what I would do with it. =) If you would like the complete recipe let me know.

The panko chicken looks delicious
I always use extra broth to make Tom kha Gai, the thai coconut soup. Boil the broth with some ginger, garlic, and lemongrass. Add chicken, coconut milk, and a little bit of soy sauce and fish sauce. When it returns to a boil, stir in some basil and enjoy. I also like to add fresh mushroom and red peppers when I add the chicken too.

I would use the broth to make so many comforting soups and chilis such as my pumpkin chili! The broth instead of water adds great flavor!!
