Mushroom, Turkey, Goat Cheese Omelet

I accomplished my little goal. Only one snack. I watched the entire movie without eating but then right when it was over I just wanted something before bed. I went into the kitchen and saw all my Snacktrition samples so I decided to pull one out.

I chose Salt & Pepper Cashews. They were yummy! Maybe a tiny bit too peppery for me but I think it was a good thing because it stopped me from eating too many. There are 3 servings in that little bag so I probably had 1 or 1 1/2 servings. Not too bad.

I got in bed around 12:30 and could not sleep so I got up at 1 to take some Melatonin. Another snack was really on my mind but I kept thinking about the blog and how I promised to only have one. Luckily the Melatonin knocked me out!

I woke up at 8:30 this morning and could not fall back asleep. I had this slight feeling of hunger and my room was very bright from the snow reflection shining in. At 9 I was still up so I decided to make an early breakfast. An omelet sounded good!

I started off by cooking some mushrooms and turkey on the stove.

I then added 2 egg whites and 1 egg.

And then I brought out my new (free) pack of Goat Cheese!!! It was an accident! It happened to be under my purse when I was paying. Oops :)

I sprinkled some on to the top of the omelet once it was cooked so that it could melt away!

I toasted an Arnold’s Sandwich Thin for the side topped with Smart Balance Spray Butter and Strawberry Preserves.
Perfect breakfast!

I was soo tired and probably did not need dessert but the Chobani and chocolate chips were staring me in the face when I opened the fridge! I could not let them get lonely!

I only filled my cup with a little bit of it so I wanted more. It is just so good! I had a second serving but only a little bit more.

I was extremely full at this point. It was 9:30 and I was too tired to do anything so I got back in bed and passed out until 11:45! See..food really does help me sleep!!
I am still kind of tired so I am about to make a cup of Awake Tea. I will eventually go to the gym and tan but for now I should relax. I need to work on not stressing out so much as soon as I wake up about getting to the gym. It is the weekend so I should just chill for a while! Bye for now!
