Low Carb Day 1

Hey everyone! This is what I feel like today…

I am exhausted! I got 7 1/2 hours of sleep which is not terrible but Core Fusion mixed with not many carbs yesterday is not a good combination! I am going to stick with it till the weekend but I will just be a very tired girl.

Core Fusion was great last night but very tough! The room was extra hot too so I was drenched and had a hart time holding onto the bar since my hands were sweaty! I think I was also still sore from kickboxing on Monday. I am really feeling it today which means it worked! It just hurts to walk, sit, and climb stairs! The only issue I had with the class was that the teacher played annoying 80′s music the whole time. Usually they play dance and house music which is all I ever listen to even when I am not working out so I was not as pumped. Other than that, it was amazing and a killer workout!

For breakfast yesterday I decided to make an omelet before I left the house. I added turkey and mushrooms too. I brought it in a little to-go container so it actually stayed warm during my hour long commute! It was so good because the mushroom juice soaked up the omelet and gave it a great flavor.

I also snacked on some Flanigan Farms cashews throughout the day.

During lunch I took a nice long walk outside. I think I went 20 blocks up and 20 back. After my walk, I finally got hungry. I made a turkey and ham lettuce roll-up. No cheese since the deli guy gave me Swiss instead of American! Swiss cheese is on my list of the top 5 foods I dislike. By the time I realized it, the deli was already closed so it was a waste of 1/2 a pound of cheese! I couldn’t exchange it yesterday either because of Core Fusion so oh well!

I had a piece of dark chocolate too for a little pick-me-up!

I keep a bag of those in my desk and have 1 or 2 every day after lunch.

I got home from Core Fusion around 8:45 starving! I made another big, fun salad! I steamed broccoli and added spray butter and Parmesan.

I also made a Morningstar Farms Mushroom’s Lover burger.

I topped the salad with salsa and had edamame and hummus on the side! If I was doing the extreme Phase 1 South Beach Diet, I would not be allowed to have carrots or the black bean and corn salsa. I don’t think that is necessary and I need some sort of energy!

Dessert was sugar-free pudding with whipped cream and unsweetened carob chips.

I went back in the kitchen after and filled the cup with more whipped cream and carob chips!

Besides needing chocolate at all times, this is not hard for me at all. I will let you know if I dropped any poundage by the end of the week! My dress is actually ready to be picked up from the tailor today but I don’t think I will go get it till tomorrow since I have my first
Beam Green meeting after work! Very excited and I get to see some fellow NY bloggers!

    You are workin' your butt off!! I need chocolate everyday, too. I just have trouble deciding what kind I can keep at my house – I usually devour it too quickly! I need to try unsweetened carob chips. From what everyone says, it's not something I would eat the whole bag of in one sitting. :-)

    Nadia: I wore my HRM on Tuesday and I burned about 240 calories. The class is not really about getting your heart rate up though. It is strength training and an amazing workout! I am still so sore!
