Hey everyone. This post is going to be focused on my dinners for the past week! I’ve eaten the same thing for breakfast and lunch every single day so I figured I would not bore you with that. Of course I’ve been getting my free Energy Kitchen breakfast sandwich every morning. I think they are sick of seeing me there but I am not passing up a deal like that! Lunch has been turkey and cheese sammies..nothing new! I also want to focus on dinner because I cooked every night since Sunday! Yay!
I will recap back to Saturday since my meal was too good to forget about! My roommate and I decided to go out for Japanese at the last minute. We went to Chikurin, our favorite sushi place and now right across the street from our apartment!
We shared some edamame to start.
Along with a side salad with amazing ginger dressing.
I got two brown rice rolls for my main course: Eel Avocado roll and an Alaskan roll (cucumber, avocado, salmon).
They were both delicious! The best part is that each roll is only $2.99! Can’t beat that!
I came home craving something sweet so I heated up a few Holey Donuts!
Delicious as always! I can’t believe I still have 2 boxes of them! They are never ending! Not complaining though
On Sunday I went to the grocery store and got a bunch of fresh fruits and vegetables for the week! I got a big bag of kale so I decided it would be the perfect day to attempt kale chips!
I started off by washing the kale and breaking it into small pieces on my cookie pans.
I then coated them with some olive oil, salt, and Italian seasoning.
I put them in the oven for about 10 minutes at 350 degrees and they looked ready!
They came out great! They were crispy and had a nice flavor to them from the Italian seasoning. They really are similar to potato chips! I think next time I would skip the salt because they were slightly too salty for my taste. Other than that, I really enjoyed them.
To go with my kale chips, I made salmon and mushrooms!
The green stuff you see on the salmon is a seafood seasoning I received from Amazing Taste.
It gave the salmon a nice lemony flavor. I added balsamic on top of everything too.
I also made a sweet potato to complete the meal!
Very delicious dinner! Much more exciting than turkey wraps!
For dessert I made frozen banana with grapes and chocolate chips!
YUM! I grabbed more grapes and chocolate chips after that because they were so good and sweet!
An hour later, I had those 3 bowls of Rice Krispies I told you about on Monday but no need to bring that up again! So not necessary!
Monday night I made a similar meal for dinner because I had half of the salmon leftover. Instead of kale chips, I made steamed asparagus!
I really love my steamer!
I also had the other half of the sweet potato, salad, carrots and some baba ganoush on the side!
It was great and only took 10 minutes!
Dessert was an Oikos with more grapes and chocolate chips!
Last night I made tilapia!
I topped the tilapia and mushrooms with balsamic and sesame seeds.
I also made a sweet potato and a salad topped with hemp seeds, carrots, and cucumbers.
Yummy! This one also took just 10 minutes.
I don’t know how to cook anything too elaborate yet but this was better than heating up a fake Boca sausage and frozen broccoli! I will try to start experimenting more so I can make more exciting dinners! These were all delicious and fun to eat!
Dessert last night was cinnamon baked apples with Vanilla Oikos and a scoop of Chocolate Better ‘n Peanut Butter!
Delicious! The best part was mixing the yogurt with the peanut butter and just eating that off my spoon. I ate that while watching a million episodes of True Blood. I found some website to watch all of the episodes on so I can get myself all caught up!
Workouts
After my 35 minute run on Saturday and my hour-long elliptical session on Sunday, I was completely worn out on Monday! I really wanted to go to Kickboxing class but by the end of the day, I felt so tired and weak. I definitely overdid it. I could not see straight and felt like I just needed to collapse in bed. That is exactly what I did! Of course I could not fall asleep at 7:00 at night but it helped to just get some rest. My muscles were really shaky and throbbing. Lesson learned!
Last night I still felt a little sore but wanted to get a little cardio in. I skipped my usual Total Body Conditioning class and did 40 minutes on the elliptical. I skipped the heavy intervals that I usually do so it was a light workout but just what I needed.
Tonight I am going to Core Fusion!!! So excited! After obsessing about joining for the past few months, I finally caved yesterday and purchased 10 classes. I really should not be spending money (you’ll learn why in a future post), but I really really missed the classes. I will be taking the class with Dori and her favorite teacher so it should be a good one! I’m a little nervous since it’s been a while but I know it will be a great workout. I am thrilled that I get to go 10 times
Okay, a meeting just finished and there is lots of fruit and pastries out so I have to go grab some before they take it away!! Bye bye!

Great work with cooking! I plan to start more soon. I just ordered a steamer similar to yours, the stovetop one wasn't cutting it for me.

great job with all the cooking! another thing that is really easy to make similar to kale chips but with sweet potato is sweet potato fries! you can cut the potato into strips or thin cicles and season like you did the kale and bake in the oven. or if you are lazy like me, just spray with non-stick cooking spray, sprinkle salt, and broil in the oven for 5-6 minutes on each side. make sure to flip! i usually end up broiling mine because i am impatient LOL.
p.s. $2.99 for a good brown rice sushi roll is an amazing deal!!!!!! i would eat that every other night!!!

Man, you ARE quite the chef!! I've been wanting to try kale chips for SO long…last time I tried the kale had gone bad. But that looks SOOOO good.
That's awesome that you bought a package to CF! Sometimes I feel guilty on what I spend for workout related things, too…..but hey, if it makes ya happy, ya know? And I always tell myself there are MANY worse things I could be buying!
