After lunch, I walked for 20 minutes in this snowy weather to go tanning.
It is the LG Envy2. I already like it much better than the Blackberry. I can actually text without pressing 3 buttons at once!
I got home around 8 and started to get hungry for dinner. I bought frozen shrimp today so I decided on Shrimp Fried Rice!
I started off by cooking some squash, zucchini, onions, and mushrooms on the stove.
In another pan, I cooked the shrimp.
In a pot, I boiled some 10 Minute Success Brown Rice in a Bag.
I added the spray butter to the veggies. I added Low Sodium Soy Sauce and Sesame Seeds to the shrimp. I used spray butter, salt, pepper, and garlic powder for the rice.
In another pan, I cooked two egg whites to mix in the rice.
I then mixed the rice, veggies, shrimp, and egg whites into the pot.
Beautiful Shrimp (Not) Fried Rice!!
For the side, I made a salad with some garlic hummus and red wine vinegar on top.
This was delicious! I used to make this all the time in college and remembered today when I saw shrimp in the store!! It made 2 servings so now I have dinner for tomorrow too! The shrimp was only $4.00 and took about 5 minutes to cook so I will be doing this more often.
Here are some of the ingredients I used.
I mixed the shrimp in with the veggies to finish cooking all together.
Guess what dessert was?
I rented The Memory Keepers Daughter today because I had a free movie rental from Blockbuster. I will watch it in a little bit on this snowy night. If I have the urge to snack again, I promise it will be only one!!!!!!!! Everyone can yell at me tomorrow if I have more than that!
Goodnight!

that non-fried rice looks great, isnt it funny how we can randomly forget dishes that were real go-to meals in our past!? im so curious about that dessert now too.
how was the movie? i read the book, and it started off good, but the plot kinda died about half way through…

That dinner looks great, and such a nicely executed alteration to a not-so-healthy dish!
Hope you enjoyed your movie!

Katie: Thanks for reading! I’m loving the phone so far!
Elise: There are so many dishes I used to make in college that I am trying to remember. I used to cook a lot more because my roommate was very good at it and we would have random cooking nights. It was also easier because I got home a lot earlier from class. Now when I get home at 8 or 9 at night, I just like to use the microwave. It is much tastier to cook on the stove I must say!
I never read the book but I thought the movie was really good! I would definitely recommend it!
