A few weeks ago, I received 4 new dessert mixes that are Gluten-Free! They are made by Betty Crocker in a gluten-free processing facility.

- Betty Crocker Gluten Free Devil’s Food Cake Mix
- Betty Crocker Gluten Free Yellow Cake Mix
They also sent me a cute grocery tote bag, a magnetic grocery list and pen, and 2 free coupons for any of the varieties!
Last week, I decided to make the brownies for my mom’s birthday since she does not eat gluten.
The package said that one serving was 150 calories and 2 grams of fat prepared. I made a few substitutions so my brownies were probably much lower in calories than the package says.
The package called for 3/4 cup of butter and 2 eggs.
Instead of 2 eggs, I used 4 egg whites to save some fat and calories. Instead of butter, I used Smart Balance spread. I also coated the pan with Organic Pam.
I mixed everything together in a bowl and added some semi-sweet chocolate chips to the mix.
Then I licked the entire bowl clean
Okay, maybe I put them in the oven but I was very tempted to just dive in.
They baked for about 25 minutes.
They came out great! They were soft and delicious. My mom was very impressed when she tried one. She could not tell they were gluten-free and kept questioning me to make sure! My roommate tried one last night too and ended up eating 3! They are all gone now!
Last night, my roommate and I made the gluten-free cookies together!
2 cookies was supposed to be 150 calories but I skipped the butter and yolks again to save calories.
I stirred the mix with 1/2 cup of Smart Balance and 2 egg whites. The recipe called for vanilla too but I had none in the house.
They were warm, soft, and perfect. This was my first cookie.
Then I had another cookie plus the last brownie in the apartment!
I probably had at least 2 or 3 more cookies after that! Every couple minutes, my roommate and I were like, “Let’s just split one more.” Or we said, “We did not try one from the 2nd batch yet, one more!”
My roommate took 4 to work today to eat with her lunch! I took 2 with me. I think I need them now after all of this cookie talk!

I did not try the cake mixes yet because I’ve never made a cake before so I am a little nervous. I also do not have a cake pan yet! Once I get some cake supplies, I will definitely attempt to make one!

Missy – just a quick question for you. When reading the nutritional information on things like cake/cookie/muffin mixes, the information tends to be ONLY for the mix itself (i.e. it will say something like "for 1/4 of the package, or for 28 grams of mix"). It typically DOES NOT include the calories/fat/etc. from the ingredients you need to add, like milk/eggs/margarine. Not sure if this is the case with the brownies or cookies, but I'm pretty sure it is. While using a heatlhy alternative to butter & using egg white instead of whole eggs does save you calories and fat, you are, in fact, adding additional items to the original packaged mix and you therefore need to add the nutritional information of those items.
