Good Morning! I was about to say Happy Monday but luckily it is Tuesday! Yay! I will recap back to Saturday!
My parents came to visit for my sister’s birthday. We went to a restaurant called Vynl and I got the best vegetable goat cheese wrap ever! We went to a bar after and watched the football game for a little while. I left early so I could meet Dori and Melanie for dinner! We went to a restaurant on the Upper East Side called Merchants!
Dori and I both got 2 Lychee martinis. They were so good there…very strong!!
I have to show you Dori’s soup since it was so pretty!
It was Roasted Tomato and Fennel Soup. I tried some and it was delicious! I would definitely order it next time.
I got the Goat Cheese Salad with Peppercorn Crusted Tuna.
The salad contained arugala, blood oranges, warm goat cheese “croutons” and red beet vinaigrette. I thought I hated beets but I loved the little chunks of beets in the salad! The goat cheese balls were delicious too of course!! The 3 of us don’t get to hang out too often so we had a great time catching up!
Sunday
I woke up at 8:30 for no reason and my gym class was not till 12:15 so I decided it would be a good idea to eat breakfast! Normally I would just have a small snack but 3 hours is enough time to digest!
I made 1 egg and 1 egg white with mushrooms and Laughing Cow on a flat out wrap. I had a Click Espresso protein drink as well since I was very tired!
I went to my sister’s apartment in the city and she took me to her new gym, Club H. It was very pretty and new inside! Everyone was extremely friendly too! We took Reboundingclass first. I liked it a lot more than the one at Equinox. The teacher was fun and nice and he played great house music. I think I was more familiar with the moves this time so it was easier for me. I also liked that we used weights for some of the class. We did abs while laying on the trampolines at the end. It was a great workout!
We decided to stay for his next class, Abs, Back, and Butt. We kept our rebounders and weights but also got a body bar, a ball and sliders. We started out with the sliders under our feet. We did planks while holding onto the trampoline and had to slide our feet back and forth. It was extremely challenging! I was drenched after 5 minutes of these moves. We layed on the trampolines and did abs with the ball between our legs. My ball was too huge so I couldn’t use it for that section. We did a ton of legs moves while lifting our feet the way we do in Core Fusion! We did all kinds of other crazy moves for 45 minutes! It was a great class. I burned 350 calories in rebounding and 250 in the abs class.
We were both starving after so we went to Whole Foods!
I made a delicious salad. It had salmon, edamame, mushrooms, kale, sprout salad, baked tofu, seeweed salad, and cucumbers. I had some popchips on the side!
I hung out at my sisters apartment for the rest of the night and played online. Eventually we ordered dinner from Baja Fresh.
We split a whole wheat burrito with beans, grilled chicken, and avocado. We had some salad and wine on the side! It was yummy. We made really random dessert plates. Don’t ask.
I got hungry a few hours later once I got home so I had a little midnight snack of grapes, a Vitatop, and a few chocolate chips. Oh and I ran out of whipped cream
I went to another gym class this morning but it was not fun. I will save that for tomorrow! I will leave you with Daisy!

I think you are the exception to the rule “Don’t eat out more than once per week” because you always seem to find the healthiest restaurants and entrees! That soup looks fantastic, and yes, very pretty! The salad also looks great. I really love crusted tuna, especially when it’s on the rare side.
Glad you had a nice weekend Missy!

Lychee- Chinese fruit having a thin brittle shell enclosing a sweet jellylike pulp and a single seed.
It is veryyyy good!

One of the things I love about your blog is that you show how easy it is to eat healthy and *delicious* food on the go. I still struggle with making healthy choices at restaurants (I tend to use it as an excuse to eat not-so-healthy :/) but you show that you don’t always have to eat an iceberg lettuce salad to be healthy when eating out!
I also love that you show your exercise calorie burn. Seeing the amount of food you eat and the amount of exercise is helpful for me because sometimes I still don’t really know how to balance the two. Like, should I be burning more calories or eating less calories? Or vica versa? Does that make sense? haha
Have a great night!! xoxo G

there is something about eating pretty food that just puts me in a delicious mood, and makes the taste sour. that soup…how do they DO that? I saw one last week, a pumpklin with a cranberry coulis swirl on it! So interesting. If I did that with just three of my meals a week, I’d be a happy chicka!

my adorable kitty is about the be in trouble for all the stuff he is getting in to and dragging around the house!

How’d they get those fancy decorations on the soup?? I am so not a culinary fancy shmancy person. Highly impressed.
And Daisy? Can’t get enough of that fluffball *love*
