As most of you know, I rarely bake. Part of the reason is that I never take the time to buy the necessary essentials-baking soda, vanilla, flour, baking pans, etc. The other reason is that a plate of cookies or brownies in the kitchen is obviously very dangerous! Well last week, Musselman’s applesauce contacted me and told me they would love to see me create a recipe using their applesauce.
They sent me 2 types, Chunky and Natural.

I decided to go with the Natural since it has less calories, sugar, and contains no high fructose corn syrup.
I browsed recipes online for a few days until I found one that looked healthy and easy. I present you with Chocolate Chip Raisin Applesauce Cookies!
INGREDIENTS
1 cup(s) flour
1 teaspoon(s) cinnamon
1 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 cup(s) quick oats (not instant oatmeal)
1 cup(s) raisins
1 cup(s) chocolate chips
1 cup(s) applesauce
2 eggs
1/2 cup(s) vegetable oil
1 teaspoon(s) vanilla extract
I liked this recipe because the only thing I needed to buy was baking soda, vegetable oil, and flour. I used whole wheat flour instead of white flour and used 3 egg whites instead of 2 eggs to save a few calories.
DIRECTIONS
- Preheat the oven to 375 degrees.
- Mix the dry ingredients in the largest bowl. Mix the wet ingredients in the other bowl. Add the dry mixture to the wet mixture. Blend them well.
3. Spoon the dough for these drop cookies onto the greased cookie sheets.
4. Bake the dough for 8 to 10 minutes.
5. Allow the cookies to cool before eating them.
Enjoy!!!!
At first I thought they were a bit spongy but once they cooled for a while, they were perfect! I made half with just chocolate chips and half with both raisins and chocolate chips. I loved the ones with both! They were very addicting. I probably had at least 4 before bed..oops! It was fun baking even though I have no control with cookies! Maybe I will do a little more this weekend!

Does Daisy want to eat pretty much everything you make? I feel like my cat (Shasta) will eat anything! Let’s see… she loves carrots, mango, banana, even spinach? I just was wondering because I love the shot with Daisy lurking by the mixing bowl

I am the same way about baking, I never have the key ingredients on hand so if I ever do bake something, it is usually from a box.
