Last week, Campbell’s sent me their new Garden Vegetable Blend V8 soup to try. There was also a shopping bag, pedometer, health journal, and cool pen!
About the Garden Vegetable Blend (from the website)
With 12 different vegetables and a flavorful, hearty base, this is a robust take on vegetable soup. No artificial flavors. No preservatives. Just the delicious, vibrant taste of a full serving of vegetables with the nutritional goodness that goes along with it.
Let’s take a look at the nutrition stats.

I like that 1 serving is 120 calories. I would probably have the whole container at once so 240 is still great for a whole box of soup. It also has some protein and fiber which means that it should be pretty satisfying. My only complaint is the sodium…480 mg is a bit much for me. Hello bloat. Other than that, the stats are pretty impressive.
The directions said to put the soup in the microwave for 2-3 minutes covered. Obviously I never learned how to follow directions in school….
My excuse—I had absolutely no paper towels or napkins in my apartment to cover the bowl with! Yes, I should have cooked the soup in a pot. I do not think of these things beforehand! Pretty sad that I can’t even make soup correctly.
Luckily Daisy enjoyed it!! She did most of the cleaning
I did manage to salvage half of the bowl. I guess I was meant to just have the 1 serving!
I really liked how thick the soup was. It was much more filling than some soups since there were big chunks of vegetables. The soup tasted very good as well. I did not need to add any salt or pepper. I decided to make a little salad to go along with it.
I added hummus and Dr. Kracker’s for the side.
Very fulfilling dinner! I am always looking for new, good soups to try!

I have definitely had disasters like that in my microwave before. WHAT a bummer!! Good thing you’ve got a cat to help you clean the mess, I’m not that lucky. Unless Nick counts, but I don’t think he’s be licking anything up off the floor…haha.

OH MY! I dread the clean up. But, I am also so clumsy that I tend to avoid the microwave altogether. I love veggie soup but your right the sodium is high. Maybe use it as a base to my left over stew would not be so bad.
My fav soup is Tomato Basil. Oh yeah, I am sure the sodium is high there too.

Bahahaha! That soup is an epic microwave failure. At least you salvaged a decent serving size and enjoyed your meal…and so did Daisy.
I love Chicken Soup. My grandmother always makes it for Thanksgiving so I’m a little disappointed that I’m spending the holiday with my boyfriend’s family.

haha i have entered this v8 giveaway on like 5 different blogs. every time -> FAIL.
my all time favorite soup is vegan chunky tomato bisque from french meadow bakery / restaurant in mpls, but since i only get to eat out every so often (read: almost never) i love making homemade vegan cream of broccoli!! i have had campbells v8 version of this though and i have to admit – VERRRY good!
