Busy Bee

This is going to be a quickie since it is almost time to leave work! It was one of those rare days where I had tons of work to do! I am not complaining since the time goes by much faster. Now for some Monday food recaps!

Breakfast


This was a great bowl of oatmeal! It was two packets of Arrowhead Mills instant oats with cinnamon, raisins, skim milk, and Artisana Cashew Butter.

With some Yogi Kombucha tea on the side.

Lunch

A repeat of Sunday’s dinner:

A turkey, ham, and cheese wrap with hummus, lettuce, and Miguel’s chips on the side.

I also snacked on some Newman’s Own Organic Raisins throughout the afternoon.

Workout

I went to the gym after work and did 20 minutes on the treadmill before class. I usually do Kickboxing on Mondays because I took spin once and the teacher was NOT good! Yesterday I saw this guy teaching the spin class before mine. He was yelling and everyone looked drenched! I decided to give his class a try!

I am so glad I did! It was one of the best spin classes I’ve had in a while. I was already dying 10 minutes into the class! It was a combination of the room being incredibly hot and a great workout. The windows were all fogged up by the end of class!

The teacher walked around and would get in everyone’s face until we had the correct form. He was funny but tough so it did not make me feel uncomfortable at all. It felt like a crazy personal trainer in my face! We did crazy jumps, sprints, and hills the entire time. I wish I would have worn my heart rate monitor but I haven’t used it in a while because I was getting to frustrated when it was not registering. I really wish this guy was not a sub! He was amazing!

Dinner

I got home with quite an appetite from that workout! I decided to try out my Lightlife Chicken Strips that have been in my fridge for quite some time now.

I grilled it on stove with some mushrooms.


I also made edamame for the side.


I put everything over a salad with hummus and carrots.


Great meal! I really enjoyed the “chicken” over my salad!

I may just make the same salad tonight! It was so fun dipping everything in hummus!

Dessert

I have an hour left of work and then I am off to Total Body Conditioning class!

    Thanks for the giveaways! I've never one won yet, so I hope one of these turns out for me. :) I saw those Lightlife strips at the store but I didn't buy them because there were so many reviews of them being too salty. What do you think?

    Tasty Health Food: Now that you mention it..they were a little salty. I really enjoyed them though! I'm not a vegetarian but it would be easy enough with Lightlife products.

    I tried some lifelight "ground beef" substitute the other day and it wasn't too bad! Maybe I should try their other things?!

    those things are too salty for my taste, but i used to eat them all the time when i was in school and just becoming vegan. glad you have some real work to do today – i love when days fly by!

    Isn't it so funny that we want to groan when we actually have to work at work, but then it makes the day go by so fast that your'e actually glad it happened? Yeah, that's the case for me right now. I guess I can't complain!

    I've never tried spinning before! Everyone who does it says it's a pretty great workout. Maybe I'll try a class sometime soon?

    oh that's a MUCH better idea to stirfry those strips! I microwaved them and they turned out not good.
