Beet It!

Good Morning! I woke up bright and early today for a Core Fusion class! I met Dori and another girl name Mercedes who is also participating in the challenge. Mercedes will actually be giving me a private cooking lesson this Sunday since I won it from Dori’s charity auction! We are in the process of planning our menu :) More details to come!

I was very excited for the class since Elizabeth, the co-founder of Core Fusion and girl in the videos was the teacher! I was expecting it to be extremely challenging like her husband, Fred Devito’s classes are. It was tough but not much harder than some of the other classes I’ve taken. Don’t get me wrong; my legs are very sore and they were shaking like crazy but I did not get to the point of tears. The time flew by and it was 8:00 before I knew it! It is nice to have it all done for the day.

Back to yesterday….

I started off the day with a repeat bowl of oats!

Nature’s Path instant oats with banana, Fage, and goji berries. I can’t believe I never added yogurt to my oats before. So good.

For lunch I found a new place with all of these great looking wraps in the Chelsea Market. I got a Grilled Veggie whole wheat wrap.

It had mozzarella, sun dried tomatoes, squash, and balsamic dressing. It was good but there was way too much dressing in there. I don’t like when everything is soaking wet. It was very filling and I never felt the urge to snack the rest of the day!

After work I went to inTensati. It was a substitute but happened to be my favorite teacher! She is always so full of energy and so happy. Another great class!

I went to a different Equinox from the night before but this one also happened to be next to a Whole Foods! I have no food at home so I decided to get it again!

I got:

  • Roasted broccoli, cauliflower, brussels sprouts
  • Seaweed salad
  • Baked tofu
  • Detox salad
  • Beets
  • Carrots
  • Peppers

It’s funny because I really thought I hated beets but all of the sudden I like them. I’m not sure if I could eat them in big slices but I really like them shredded up in my salad. I have to try juicing with them!

There happened to be a Lite Choice nearby so of course I stopped in. I got Oreos N’ Cream. I love knowing that they can make any flavor I want now.

It was good but slightly lacking in the Oreo department. Maybe I am just greedy with my beloved Oreos!  I used to order Cookies N’ Cream Blizzards from Dairy Queen with extra Oreos in the middle and on top! They already have plenty in there as is! I was also 30 pounds heavier so I am better off with my Lite Choice :)

    i used to feel the SAME way about beets! and then i tried them at whole foods in the big chunks slicey things and i LOVE them now. except i can never find them so i haven’t had them since haha

    i totally need to make it to the chelsea market someday in life. we need a lunch or dinner date there someday! yay for this weekend :) i’ll email you about the details of where i should put my car soon haha

    Oh my god I love cookies n cream! I used to do the same thing with my blizards!! I liked it with chocolate ice cream too. OINK OINK BABY!! Edy’s makes a good froyo, it’s loaded cookies n cream. So many oreos in there…oh girl!
    I used to dislike lots of foods! Too many to name but one that sticks out is mushrooms.

    I used to hate beets, too, and only had them last year and LOVED them! I used to hate a lot of things LOL. Peanut butter (I know!), canteloupe, and brussels sprouts. Now I LOVE all 3.

    Hmmm….can cookie dough be considered a topping? :-) I would say sprinkles – or crushed oreos. YUM.

  12. Seaweed salad shows up a lot on your blog, I HAVE to try it some day.

    There are so many foods I used to hate, but now love. Coconut is one of them, but the most important one is crunchy peanut butter. I used to detest it, now I eat it every day!

    Favorite ice cream topping; hot fudge and peanut butter cups. Nothing beats it.

Hmm food I used to hate..i was never really a picky eater..but I used to not really be into turnips too much. But now I crave them all the time! weird.   14. yummm delish salad!! hmmm food I used to hate but now love, thats a hard one!! well there was a time i HATED tomatoes bc I got sick on an airplane once and blamed them on my tuna and tomato sandwich, I started eating them again about 5 years ago.

    favorite ice cream hmmm i LOVE BUTTER PECAN! it tastes so rich and creamy!! I love pecans :) keep up the awesome workouts, girl!

    I don’t know if this counts as a food but I used to hate red wine, now it’s my adult beverage of choice. My favorite topping would have to be rainbow sprinkles, it reminds me of getting ice cream at Custer’s Last Stand in Wurtsboro,NY during the summer when I was a kid :)

    I used to hate peanut butter and colard greens (umm not combined though, although that could be interesting!) and now I love them.
    Ice cream topping my favorite by far is chocolate strawberry pieces. One of the mom and pop ice cream places in Phoenix I used to go had that and I have never seen it since :( But if I cant have that I generally stick to caramel and sprinkles.

  18. Food I used to hate but love is spaghetti squash. I always thought it lacked in flavor, but now I think it’s very tasty. Weird.

    Oatmeal is a food I used to hate but now love. My roomie all though college would eat it everyday and I thought there was something wrong with her! Now I have cravings for it all of the time!
