Morning! Hope everyone survived their first day back at work after the holidays! My day was okay since I was busy but I was incredibly tired! I was still on my waking up at 1:00 in the afternoon schedule! I also ran out of melatonin on Sunday night so I didn’t fall asleep till 3 in the morning! I used food as a tool to make me tired which is never too fun the next day. Cereal and peanut butter at 2 am always seem to do the trick though! I think I am almost back on schedule today! Much more awake!
Breakfast
After eating Cheerios in the middle of the night, the last thing I wanted the next morning was oatmeal. I made an omelet to take to work with me instead.
It contained 1 egg, 2 egg whites, and Laughing Cow cheese. It kept me full for a lot longer than oatmeal too. I am going to start bringing them more!
Lunch
I went to Hale and Hearty and got my favorite salad ever!
It contained cucumbers, carrots, edamame, tomatoes, avocado, and goat cheese. Yum! I had low-fat carrot ginger dressing on the side.
Later in the afternoon, I snacked on an 18 Rabbits granola bar. I got to try their brand new flavor that actually just came out in stores yesterday! It is called the Belle Bananas Foster bar.
I really enjoyed this flavor. It is made with hazelnut, walnut, flax, cocoa nibs, and is also wheat and dairy free. I loved the caramelized bananas throughout the bar. It was very filling too!
After work I had to skip the gym because I had to take Daisy to the vet. By the time I was done, I was starving for dinner! I made:
Healthified Chicken Parmesan!
I heated up 3 Applegate Farms chicken strips and topped them over a salad with cucumbers, celery, and bell peppers. I then topped the chicken with red sauce and Parmesan cheese.
It was a delicious and quick salad!
Dessert was banana soft serve with some chocolate chips and whipped cream!
Tonight I will be getting back into my Core Fusion challenge! I actually plan on taking Core Fusion Open for the next 3 or 4 days in a row! I will be a very sore girl! Can’t wait!!

I am usually a balsamic girl but I am loving the low-fat carrot ginger at Hale and Hearty!!

I’m actually not a huge fan of bars. I can’t seem to find one I like. I am really on a low-fat blush vinaigrette dressing kick right now. So yummy!

I find that eggs always keep me much more full than any other breakfast.
Honestly, I really like ranch dressing. And the Mediterranean one from Whole Foods. As for bars, I like Lara and Luna. I’m not a huge bar fan, I guess. I just buy them sporadically.

I think I like clif mojo bars the best! For some reason, I don’t really like salad dressing that much. Have a great Tuesday!

I actually love the Pure Bars. The cherry cashew is my favorite. I treat those as my “candy bars”.
I actually think that I am the only person in America who does like salad dressing. It has never been my thing.

My favorite bar is the caramel blast Balance Bar. I eat one almost every night before bed. My favorite dressing is blue cheese. I don’t order it often though. I could dip anything in blue cheese dressing! My fave thing is to dip my pizza crust in it. I want some! I usually use balsamic or just regular vinegar on the side though.
I always have trouble sleeping on Sunday night nights before go back to work. I take Tylenol PM and my boyfriend takes Benadryl. So healthy right? haha!

Oh I like the idea of a carrot, ginger salad dressing! Right now I’m really into a sesame ginger dressing that you can find at Trader Joe’s. I also like plain old oil and vinegar. As for bars, I’m a Z-bar fan, but I REALLY like the SOYJOY (I know, no one else does!) and Cliff Mojo bars. Yum!

Hey! I just found your blog (and also read the lil tidbit about you in Shape magazine while I was waiting for my hair appointment today!) Congrats! Your banana soft serve looks absolutely heavenly!!! As for favourite bar- I LOVE Zbars also- chocolate chip is my favourite, I also love Luna Nutz n Chocolate. As for salad dressing- almost anything balsamic vinegar based (balsamic dijon etc) or garlicky lemon vinaigrette or a gingery dressing if I’m eating Asian food.

I keep seeing that bar EVERYWHERE and I’m dying to try it! My favorite bar is either Super Protein or Mocha-walla Odwalla bars. As far as dressing – hummus, salsa, or strawberry poppyseed. Balsamic is good though!
