I basically ate the same exact thing on Tuesday and Wednesday so this should be a nice little summary of both days. The main focus will be my new spiralizer! I used it for the first time so I will give you my thoughts on that a little later.

Breakfast both days was oatmeal with a banana, cinnamon, skim milk, and Artisana raw cashew butter.

Lunch both days was crunchy Barney Butter, Crofter’s Superfruit spread, and a banana on an Arnold’s sandwich thin.

On Tuesday I had Riceworks chips on the side. They are my favorite next to popchips!

On Wednesday I ate the sandwich with Jalapeno Kettle chips. Boyfriend bought them for me because they are his new favorite chip. They were good but a tad too spicy for me!

Tuesday snack time was grapes and a chocolate square. Okay maybe 2 or 3 chocolate squares because they put like 500 of them in a jar for us to take! Now there are about 20 pieces of chocolate in my desk because I like free food…and chocolate of course!

My Wednesday snack was a bit different!! It was 80 degrees outside so I figured I better take full advantage of delicious ice cream in the sun while I have the chance!

It was half vanilla and half fluffernutterbutter (I think that was the name?). Very good!

I also had a Z-Bar before I left work since I knew I would not be eating dinner for another 3 hours.

Spiralizer!!

I used my new spiralizer both Tuesday and Wednesday for dinner. I honestly had a difficult time figuring out how to use it. I would stick the squash in and turn the handle but nothing would happen. Finally after 1000 tries, it worked! There were 2 things I was doing wrong:

  1. I was turning the handle in the wrong direction! It is supposed to be pulled towards you and not away from you. Oops!
  2. The spiralizer was not suctioned onto my countertop completely. This caused it to slide around and ended up making a mess!

Now that I have the hang of it, it is super easy to use!

The best part is what happens to the squash at the end.

Very fun to munch on!

I did munch on some of the noodles raw but I decided to cook them until I figure out how to make a good sauce!

I had no clue what to top them with so I decided on salsa since I have 20 million jars to use up.

I topped the noodles over a salad and sliced up half of an avocado.

I ate my amazing salad with a ZEVIA!

The salad and noodles were so good that I made the same exact dinner last night! I topped some cheese on last night’s salad as well.

The star of the salad was the avocado. I can’t believe I have not made one in over a year! I think I had a cutting disaster when I attempted to eat one last time so I never bought one again. I am in love with them and was able to cut it this time so you might being seeing a lot more of them!

I am so happy I decided to get the spiralizer. Hopefully I can get a little more creative with it. It is completely worth it for just $30.00 on Amazon!

I love my grapes, Oikos, and carob chips desserts as you can see.

That was it in terms of food for Tuesday but Wednesday I had some sleeping issues. I tried to go to bed at 10:15 but was still awake at midnight. Finally I fell asleep after taking a melatonin. I woke up again at 2:00. I was a little hungry so I had a Blueberry Z-Bar. I was still awake at 3:00 so I decided to make a little sandwich.

Lightlife Smart Bologna on an Arnold’s Sandwich Thin with a few pretzel crisps. This did the trick! t is annoying to have to eat in the middle of the night in order to fall back asleep but I know I was in complete control. This usually happens at this time of month anyway if ya know what I mean.

Workouts!

Tuesday I took spin class with one of my favorite teachers. The teacher always tells us a bunch of inspirational quotes before class to get us motivated which is cool. I was pretty tired and did not work too hard but it was still a great class.

Wednesday I went to Core Fusion Sport! I was a little nervous because I only took Sport once before and it was HARD. The class involves a weighted ball, band, and more cardio than Core Fusion Open. Once again, the class was tough but also an amazing workout! There were only 2 other girls so it was like our own personal training session! The teacher was awesome too. He was a cute little skinny guy with so much energy. I am used to teachers correcting my form the entire time but he complimented me so much too! He told me my back looked better and better each time we did this one move and that he wanted to take a picture to show me! The hour flew by! I can’t wait to take another class with him!

Tonight I have plans with my sister because I have not seen her since her wedding which was a month ago! We are taking a boot camp class and then her husband (so weird to say) is checking out my laptop since it is completely broken now. Stupid virus!

Okay, I am off because they actually gave me more work to do! My posts might be a little late from now on because the work might take an hour or two first thing in the morning.

    Insideiamdancing: The melatonin really helps me. I take just half and it knocks me out. It gives me much less of that morning hangover than Advil PM and all of those. My only complaint is I have really weird dreams when I take it!

    Please don't take this the wrong way, as I'm not writing it for any reason other than the fact that your eating habits remind me a lot of myself when I ate a lot of sugar and carbs. I'm sure you know all of this, and I'm HONESTLY not hating on you, girl, it's just that I've read you saying you have a "huge sweet tooth", and a lot of your meals are comprised mainly of carbs and sugar (oatmeal w/banana, bread with jelly and banana and chips), and doing that regularly tends to gives us huge blood sugar spikes, which we keep feeling the urge to maintain. I spent years eating the same types of foods, especially while I was vegan, as vegan diets are usually way too high in carbs and low in useful types of protein, and I had the hardest time maintaining my weight until I started incorporating more vegetables and protein, and keeping the carbs to a minimum. I'm not talking Atkins diet, but a healthy minumum. It's so common for us to starting buying a ton of foods at health food stores that are more like health food junkfood in terms of caloric value and sugar content, and I did it for years, as I work in the industry and would get everything for free. I also notice people getting "addicted" to sugary drinks like kombucha (obviously not addicted but you know what I mean ;) , and the stuff is mostly sugar and vinegar- a lot of people notice they feel sort of drunk-ish when they drink it, and I think that's why we keep wanting to drink it. Anyway, I'm just commenting because I've been following your blog and you're such a cool girl, and although I usually refrain from saying *anything* that sounds remotely critical since it typically results in an onslaught of people getting pissy, know that I'm only saying it because I care about people and their health, body issues, etc. Reducing my sugar intake had a drastic effect on my ability to maintain a healthy weight and all but got rid of sugar cravings, nighttime food cravings, needing to think about calories, etc. I'm not saying I don't eat any, but I eat more minimal amounts. Please don't be offended, but I'm not sure if you've considered watching the levels of carbs and sugar at your meals more closely to see if it has a positive effect (?) I definitely had to reduce my own intake veryyyy slowly, because we tend to crave enough sugar and carbs to maintain the blood sugar levels we're used to, but the fact is that most of us eat way more than we need…since it's so delicious ;)

    You are what I hope to be. I lost a ton of weight, and keeping a food journal on My Fitness Pal really helped. It just also gave me an obsession with calories, balancing nutrient ratios, and a constant "not doing enough!" attitude. Ok, the journal did not do that, but it gave me a very easy means to damage myself; I'm slightly OCD.

    I'm still "recovering," but I'm definitely getting more comfortable around food. Being a foodie certainly helps.

    Seeing your blog gives me inspiration to chill out and let things flow. A big hurdle for me is night eating–but not in the conventional sense. I'm trying to get comfortable with the fact I -can- have dessert every day, I just shouldn't go balls out about it. Because before, I'd start feeling guilty if I had so much as an apple if I was going to bed soon.

    But life's a road! I like to think I'm blasting down it on a Harley.

    Lilliah: I understand where you are coming from. I have tried eating fewer carbs but sometimes that leads me to binge even more because I feel deprived. Now I usually have oats for breakfast, a mix of protein and carbs for lunch, and salad and veggies-all protein for dinner. I do try to balance it all out. When I did South Beach a few weeks ago, I would binge on peanut butter so for me, it is more emotional I think.
